Based in California's Sierra Nevada Foothills, Clime wines is a husband and wife partnership who pride themselves in their organic practices and small lot wines. The husband and wife team have extensive winery experience working in major winemaking areas such as New Zealand, France, Italy, Canada and California. They are inspired by old-world styles that are restrained and simplistic with the goal of capturing each vineyards character, without excessive intervention.

We’re not kidding about the cafe. Spicy, savory, fruity, earthy and terribly easy to drink (at $14.95 you can drink it all the time guilt-free!). Fermented in two lots, one de-stemmed, and one whole cluster. The whole clusters are gently placed in a covered stainless steel tank, where they undergo a 20 day semi-carbonic fermentation, after which they are pressed and blended with the traditionally fermented de-stemmed lot. Aged 9 months in neutral French barrels, followed by 3 months in stainless drums.

PAIRING IDEAS In Italy, wild boar are a serious problem in the vineyards...thus they eat a lot of it! Any slowly braised pork dish is fantastic with this wine. Simple grilled sausages are fantastic, too!
