If you’ve had the pleasure of trying any of our past Romuald Valot offerings, you know it’s crucial to strike while the iron’s hot. These are some of the top, most desired renderings of Burgundy today from a producer who staunchly prioritizes holistic farming methods and minimal intervention – going so far as to completely eradicate chemicals from his plots, instead opting for plant-based infusions, and even refusing to prune some of his sites to allow nature to do its thing instead. His practices are decidedly old-school – an intentional choice after growing up in Burgundy as the son of a vigneron, and watching too many producers take shortcuts behind the scenes to churn out their high-volume cuvees.

After a time in Beaujolais where he grew his land holdings alongside his status as a farmer first, vintner second – he returned to Burgundy to thoughtfully select highly regarded, carefully maintained vineyards and finally craft his own authentic wines in his homeland. La Comme is one of the larger Premier Cru vineyards from which he sources fruit – about 21.5 hectares on the border of Chassagne-Montrachet with shallow, gravelly soils and deep clay subsoils. It produces some of Santenay’s best wines, and this enchanting 2022 Pinot Noir certainly maintains that standing.

With its rich cherry core, the concentrated and well-structured wine delivers accents of mocha, vanilla, spiced poached plums, fennel seed, and a sprinkling of black pepper and cinnamon. It has a persistent, smooth, and lingering finish that tingles with subtle spiciness and warmth. The savory and earthy undertones add an extra level of complexity, making this an all-around bargain at 50% off and under $45 a bottle. Yet another bottling that firmly plants us within the Romuald Valot fan club – but sadly, we don’t have a lot, so be sure to grab a couple while they’re still here to be grabbed!

PAIRING IDEAS: Bring on all the cozy meals now that we’re firmly in December – like a simple Kielbasa, green cabbage, and Yukon gold potato skillet with a creamy, seedy mustard sauce. The spice from the sausage and simple veggies will bring out the layered characteristics of this wine.
