“Forget everything you expect from this appellation. Such a dynamic wine... with a concentration and brilliance that take your breath away.” –James Suckling, 96 points

History and winemaking mastery collide at Domaine du Cellier Aux Moines, one of Burgundy’s oldest monastic vineyards. It was founded by Cistercian monks in the 12th century, and the 5-hectare estate perches on a breezy, south-facing hillside in Givry. Today, the estate is run by the Pascal family, who have revived the historic terroir with a nod to both tradition and innovation.

The 2023 Les Charmelottes White Burgundy hails from a vineyard plot in the Montagny appellation, grown on vines that are more than 80 years old. As Wine Review Online’s 94-point score so perfectly states, “Turns out—age does matter!” In comparison with the estate’s Les Combes vines – with essentially the same soils and exposure as these vines, but only about 12 years old– this is so much more exuberant and complex, with layers of interest and intrigue that aren’t often found in Montagny wines.

This biodynamic White Burgundy just has so much going on, it’s hard to predict which way it’ll take you next! It starts with orange peel and lemon meringue before taking you through a pear orchard, then sprinkles some creamy vanilla and warm spices into the mix. The palate is round but leveled out with generous acidity to draw out the chalky, mineral-tinged finish. I could truly drink this every day and never tire of it. And I have a hunch you’ll feel the same! We don’t get nearly enough Premier Cru White Burgundy these days, so I’d recommend scooping up as much as you can!

PAIRING IDEAS: These crunchy blackened salmon tacos are on regular rotation in our house – they’re easy but flavorful with so much great texture, and the tastiest counterpart to this charming White Burgundy.

About The Producer

Domaine du Cellier aux Moines is one of Burgundy’s historic estates, with origins tracing back to the 12th century when Cistercian monks first established the vineyards near Givry in the Côte Chalonnaise. The estate was revived in 2004 by the Pascal family, who meticulously restored the ancient cellars and committed to organic and biodynamic farming to honor its storied heritage. Today, under the leadership of Philippe and Catherine Pascal and their daughter Marguerite, Domaine du Cellier aux Moines produces elegant, terroir-focused wines that capture the purity and depth of Burgundy’s limestone soils. With precise, thoughtful winemaking and deep respect for tradition, the domaine stands as a bridge between Burgundy’s monastic past and its vibrant, modern future.
