Founded by Cistercian monks in the 12th century, Domaine du Cellier Aux Moines is one of the most storied estates in Burgundy. Perched on a breezy, south-facing hillside in Givry, the 5-hectare Clos du Cellier Aux Moines has long been prized for its sun-drenched, high-altitude positioning – ranging from 269 to 298 meters – that yields Pinot Noir of exceptional depth and freshness. Today, the estate is run by the Pascal family, who have revived this historic terroir with a nod to both tradition and innovation.
The 2023 Clos du Cellier Aux Moines is their flagship Pinot Noir that emanates both elegance and balance. The vineyard’s mix of clay-alluvium and oolitic limestone pebbles gives the wine both body and lift, while vines planted between the 1970s and early 2000s provide depth and complexity. Roughly 70% whole-cluster fermentation and gentle extraction result in a wine that captures Givry’s hallmark spice and silkiness.
This is a wine that demonstrates quiet power with its sleek yet expressive personality.
