Bollinger’s NV Special Cuvée knocks it out of the park. Made from 60% Pinot Noir, 25% Chardonnay and the rest Pinot Meunier, with 30% of the blend brought up in barrels, it boasts a rich, deep, medium to full-bodied style as well as terrific notes of lemon curd, crème brûlée, caramelized stone fruits, and hints of toasty nuttiness that develop with time in the glass. It’s a big, rich Champagne that stays balanced and pure. Beautiful stuff. (TS, 8/2020)

Dating back to the time Andrew Jackson was President (1829), Bollinger has firmly established itself as one of the great houses, and ALWAYS has a rock-solid, satisfying, hugely over-achieving NV Cuvee. This is one of my "go-to" Champagnes that always delivers toasty, textured, rich bubbles time after time. Full-bodied, but crackling with acidity and almondy/yeasty/creme brulee goodness, with that signature kiss of oak from the barrel aging. It is taken to the next level with Bollinger’s amazing stash of reserve wine which makes up 60% of the blend. You CANNOT go wrong, unless we sell out before you get any!

PAIRING IDEAS: You know what sounds good? A brown butter ravioli. Make this as complex as you like! You could even just get some good fresh ravioli (we like the large size), and make a wonderful brown butter sauce.

About the Producer

The story began with Athanase de Villermont, the youngest son of a noble family with a brilliant destiny. He then met Joseph Bollinger, a widely travelled German who had left his country of birth to learn about the Champagne wine trade, and Paul Renaudin, a local man who was fascinated by the world of wine. The firm of Renaudin-Bollinger & Cie was founded on 6th February 1829. Joseph took care of sales and Paul of the cellar. Athanase had founded a champagne House that was to endure through the centuries.
