Made with Kumamoto Shinriki, an heirloom rice revived after being out of use for 50 to 100 years, Chiyonosono is one of the few breweries to bring back such forgotten rice strains. Shinriki, meaning "Sacred Power" in Japanese, reflects the bold, briny ocean flavors found in this sake. It is rich and full-flavored, offering fresh-cut green grass aromas with hints of tropical fruits. The silky mouthfeel carries briny and umami notes, finishing with excellent acidity. This sake pairs wonderfully with fresh oysters, calamari, mustard greens, endive, or bok choy.
About the Producer
Chiyonosono Brewery, founded in 1896 and located on the southernmost island of Kyushu in Kumamoto, is known as the Junmai expert. After World War II, Chiyonosono became the first brewery to stop adding distilled alcohol to its sake, pioneering the popular Junmai category. Originally a rice wholesaler, the brewery has deep expertise in rice cultivation and access to heirloom strains, allowing them to brew sake with distinctive rice textures and aromas. Kyushu, a region known for its blend of Asian and European cuisine, historic architecture, and unique culture, is home to this innovative brewery. The future of Chiyonosono looks bright, as Yuri Honda, the daughter of the current brewery president, is already making waves in the sake community, ready to carry forward the brewery's legacy of creating forward-thinking yet approachable sake. Under the guidance of Toji (master brewer) Yoshihiro Inaba, Chiyonosono continues to thrive.
