Tensei Sake Song of the Sea Junmai Gingo Japan NV - First Bottle

Reviews

100 Jeb Dunnuck -
Pure perfection in a glass, the 2016 Syrah Bionic Frog is another magical wine from this estate and is as good as it gets. Crème de cassis, rose petals, menthol, ash, and smoky, meaty, soy sauce notes all emerge from this full-bodied, singular wine. Full-bodied, expansive, and powerful yet weightless on the palate, it has ultra-fine tannins, a brilliant finish, and a singular, magical character. It matches the otherworldly 2014 and 2010 and is one of the wines of the vintage

Song of the Sea offers a rare opportunity to experience sake made with Yeast #9, sourced directly from the brewery that originally discovered it, rather than the National Research Institute of Brewing. This sake is a tribute to the brewery's seaside location in Kanagawa, delivering lively and intense flavors reminiscent of saltwater taffy, evoking memories of the beach. Aromas of apple, banana, and melon lead the nose and flow onto the palate, where the saltwater taffy notes add a touch of sweetness and minerality. The result is an intense yet crisp and clean sake, perfect for pairing with grilled lamb chops, couscous, or paprika chicken.

About the Producer

Tensei Brewery, founded in 1872 in Kanagawa, embodies a dynamic and entrepreneurial spirit with a laid-back surfer vibe. With an international outlook and strong ties to the local culture, the brewery draws inspiration from Kanagawa’s stunning coastline, where the famous Japanese woodblock art The Great Wave originated. Beyond sake, Tensei is a multi-faceted enterprise, operating a beer brewery, a Japanese and Italian restaurant, a bakery, and an art gallery—all on site. Under the leadership of Brewery President Mokichi Kumazawa and Toji (master brewer) Tetsuro Igarashi, Tensei continues to innovate while embracing the relaxed, creative energy of its surroundings.
