Philip Holbrook and Wil Prim – long-time Napa natives – are the gents behind Revik. Their focus is on single-vineyard wines, and microscopic productions...such as the 150 cases of this wine. Philip Holbrook is the grandson of Margrit Mondavi – Robert Mondavi’s wife – and she also helped to design these exceptional labels for the Revik brand. The name stems from two old English words – ‘revel’ and ‘vik’ which translates to ‘time’ and ‘place’. Rather fitting for their style and winemaking approach – these are wines that are minimally manipulated, and they express the season and the space from whence they come brilliantly.
If you’ve ever been fortunate enough to have Steve Matthiasson’s chardonnay, you’ll find a lot in common with this. A bright, floral, and fresh style of chardonnay – with piercing acidity, low alcohol, and a delicate texture. The wine is creamy without being rich, with copious accents of river rocks, struck flint, and a pure, saline minerality throughout. Delicate tropical fruit notes of guava and lychee, with a citrine backbone of lemons and tangerine. It’s a delight to sip and savor, and drinking supremely youthful, even at five years in! This is as fresh and bright a chardonnay as you're likely to find in the Napa AVA, and at our price – you’d be wise to load up on as much as you can while we have it.
PAIRING IDEAS: Seared scallops with a grapefruit beurre blanc is my dish to impress with this wine. I’m going to take some inspiration from the labels too, and garnish is all pretty like with some edible flowers and herbs. Simple elegance in the glass and on the plate!
