"2020 was an early season, so we picked it all before September 1, and the fires started on August 17. We did lay off on the percentage of new wood," he continued, explaining that lab numbers are not necessarily representative of flavor. "I tested my 2019s with the 2020s, and they showed higher smoke numbers than the 2020s, simply from the char of the barrel. The smoke numbers we saw were irrelevant because there's just much more to smoke taint than that."
