1792. The US Postal Service was created, France's King Louis XVI went on trial, and the Collet family planted chardonnay in the Kimmeridgian soils of Chablis. The young Romain Collet, who started his own Domaine in 2009, has stunned the wine world with his site-specific wines. Since he took over for his gregarious father after he suffered a stroke in 2008, he converted the family's extensive holdings to organic farming, which has paid off in more expressive and transparent wines.

Montee de Tonnerre premier cru climat is named after the old Roman road that climbs the hill towards Tonnerre. The grapes ripen easily here due to its exposure to the afternoon sun. The soil is Kimmeridgian marly limestone and makes incredibly mineral wines with notes of salinity and finesse.

There’s a wonderful candied lemon, sea spray, Honeycrisp apple, and persistent salinity which complements all the fine stone fruit flavors so nicely. It’s wonderfully endowed, minerally, complex, and has a touch of creaminess that is widely appealing... As you can tell, we’re having a lot of fun drinking it! While it lasts...!

PAIRING IDEAS: On a recent trip to Mexico, we had the BEST fish tacos, with a twist. Instead of tortillas, the restaurant used a paper thin slice of jicama, and WOW, it was delicious, crunchy, and carb-free to boot! Try it! All you need is a big round piece of jicama and a mandolin. Sear some fish, cabbage, avocado, good to go!

About the Producer

The Collet family has been making wine in Chablis since 1792 and the torch has been passed from generation to generation. The estate went from selling to negociants in 1952 to producing their first vintage in 1979 under their own label. Gilles Collet, who helped his father Jean with the winemaking and who is also remembered as one of the most animated personalities in Chablis. He made spectacular wine and was the "life of the party." Gilles had to pass the torch to his son in 2008, due to his health but had the utmost faith and trust in his son to carry on his legacy. The estate is now managed by Romain Collet who is now the fourth generation of Collets in Chablis. He studied winemaking at the school in Beaune and had various internships in France and New Zealand. Romain truly believes that each wine has a voice and he has taken the necessary steps to exemplify the natural talents of their many different climates.
