By now, you know our championing of this producer (gotta get in before the prices climb…!), and hopefully, you love Romain’s wines as much as we do. At this point, the wine is open and ready for business. Rich and concentrated (for something under $30!!) with all that wonderful citrus and lemon complexity, flintiness, and overall sense of harmony. We LOVE it and you will too!

Butteaux is one of the most prized 1er cru sites in Chablis, which is actually a Premier Cru that is nested within the southern portion of the larger Montmains 1er cru and is flanked by Forets to the north. Butteaux is the steepest portion of the vineyard with limestone and white clay, and is known for being firm, powerful, and highly concentrated in comparison to Montmains or Forets. This is hallowed territory, with neighboring vines being owned by heavy hitters like Raveneau and Dauvissat. Fermentation takes place with indigenous yeasts in stainless steel, and then rests in large, neutral foudres for 12 months. Farming is all organic to boot. This is the real deal! While it lasts...!

PAIRING IDEAS: This is so good, and so affordable, we’re planning pulled pork sandwiches this weekend. No BBQ sauce though, we’re classing it up a bit with David Chang’s scallion ginger sauce - recipe here. Just pile it on a great bun and you’re DONE.

About the Producer

The Collet family has been making wine in Chablis since 1792 and the torch has been passed from generation to generation. The estate went from selling to negociants in 1952 to producing their first vintage in 1979 under their own label. Gilles Collet, who helped his father Jean with the winemaking and who is also remembered as one of the most animated personalities in Chablis. He made spectacular wine and was the "life of the party." Gilles had to pass the torch to his son in 2008, due to his health but had the utmost faith and trust in his son to carry on his legacy. The estate is now managed by Romain Collet who is now the fourth generation of Collets in Chablis. He studied winemaking at the school in Beaune and had various internships in France and New Zealand. Romain truly believes that each wine has a voice and he has taken the necessary steps to exemplify the natural talents of their many different climates.
