Toasty hints of brioche, coffee liqueur and vanilla bean on the nose are more subtle on the palate of this plush-textured Champagne, where flavors of persimmon, yellow peach, blanched almond and Mandarin orange peel are underscored by minerally saline and chalk. The NV Brut Grand Cellier (2015 base) is fabulous. Rich, ample and creamy, the Grand Cellier is so alluring from the very first taste. All the Vilmart signatures - most notably uncommon elegance - come through loud and clear. Baked apple tart, pear, spice and a hint of butter add nuance, but it is the wine's overall feel that impresses most. Readers will have a hard time keeping their hands off this seductive Champagne from Vilmart. Disgorged: July 1, 2018.

Is there a more consistent go-to fine Champagne than Vilmart? Our lips were quivering as we unloaded this off the truck last week – this wine is absolutely so far above its price range, it boggles the mind. 70% chardonnay and 30% pinot noir, with ultra-fine briskness, stone and flower, the hints of honeysuckle and chamomile, preserved lemon and whiffs of toast...fantastic. This zippy bubbly is for mineral and acid lovers, the balance is impeccable. Champagne summer is here and this is LOAD UP level bubbles for any occasion, special or not. At this price?!

PAIRING IDEAS: Shell-on grilled shrimp. Melt some butter, garlic, a tiny bit of rosemary and a bit of smoked/sweet paprika. Toss the shrimp. Put in fridge and let it harden, and you want it to self-baste on the grill. Grill to perfection and peel and eat with crusty bread and cheese (and a lot of napkins).

About the Producer

Vilmart & Cie. traces its history back to 1890, and it has always been a recoltant-manipulant, making champagne exclusively from estate-owned vines. Since 1989 the estate has been in the hands of Laurent Champs, the fifth generation of the family to take the helm of the house. The majority of Vilmart's 11 hectares of vines lie in Rilly-la-Montagne, although there are a few plots just over the border in the neighboring village of Villers-Allerand. Vilmart is a member of Ampelos, an organization that promotes organic and sustainable viticulture, and Champs has never used any herbicides or chemical fertilizers since taking over the estate. All of the vineyards are planted with cover crops and plowed, and Champs enjoys an additional advantage in that his parcels are relatively large?only 12 different parcels over 11 hectares - meaning that he is more protected from contamination by chemical treatments in neighboring plots. Vilmart & Cie. is not only one of the greatest grower-estates in Champagne, but one of the finest champagne producers of any type in the region.
