Paradoux blanco this vintage includes the years 2017, 2018 and 2019, 66% of semillon and the rest of sauvignon blanc, all from vineyards in the Uco Valley. This is another of the Argentine whites that need at least three to four years in the bottle to be able to show everything they have. It is intense in layers of flavors, the aging in wood is felt in its toasted touches, and the body is concentrated, dense. But everything is still embryonic. The NV Blanc de Blancs Paradoux - V Edition is a blend of vintages comprising 66% Sémillon and 34% Sauvignon Blanc from the Uco Valley, fermented and aged in French barrels for 14 months. Golden in the glass. The intense nose offers honey with hints of herbs and lime alongside vanilla, smoke and other notes from the aging process. In the mouth it begins with a refreshing kick before the unctuous, voluminous flow and well-packaged freshness come to the fore against a backdrop of oak, smoke and vanilla. With a prolix finish and aftertaste, this a delicious wine.

Paradoux Blanco is multi-vintage blend (‘17-’19) in keeping with the philosophy at Alandes. It soars with stylish, creamy, concentrated flavors of exotic limes, hay, honeysuckle and lanolin, with amazing tension between the acidity and the creaminess. The oak is present yet so well-handled, it just adds another dimension.

PAIRING IDEAS: Lots of fun to be had here…we’d pick a scallop dish but another with more variety would be seafood risotto. Add whatever your fave seafood is, good cheese, good stock, and maybe even a dash of citrus, like this recipe. Fantastic with this complex white!
