An edgy, lively Champagne with bread dough, dried apples and apricots. Toffee with caramel with a lifted sense. Light oxidation with some nuts and saltiness. Full-bodied and very layered with so much going on. Creme brulee, pie crust and zingy acidity. Minty and lively. Strawberries and oranges coming through. This is 80% pinot noir and 20% chardonnay, all fermented in wood, 60% new. Drink now.

Disgorged in March 2020, Giraud's newly released NV Brut Grand Cru Aÿ Fût de Chêne MV15 is terrific, bursting from the glass with aromas of pear, orange oil and peach mingled with nuances of warm pastry, toasted almonds, beeswax and clear honey that's already very nicely integrated. Full-bodied, textural and concentrated, this is a deep and muscular Champagne, with striking structure and vinosity, underpinned by lively acids and complemented by a pinpoint mousse.

It’s good to be an A-Lister! A true jewel in the realm of rare Champagne, we are terribly proud to have scored a few cases of the MV15 Grand Cru Aÿ Fût de Chêne, oh yes! It's built from two-thirds 2015 vintage and one-third a perpetual reserve, which the winery started in 1990. It's fermented and aged in oak, which gives it its rich and broad appeal with 60% new oak. Savvy drinkers will be all over this, understandably…Don’t miss, will FLY out!

You'll notice the clamp closure here, which may look daunting, but Giraud provdes a special tool, which will arrive in the beautiful one pack wood gift box that this comes in. You insert the knife vertically between the side of the metal clamp and the side of the cork. Then, you pry the metal clamp at the bottom away from the neck of the bottle. It takes minimal effort to do this. You can also use a butter knife or corkscrew portion of a waiter's corkscrew, if you ever find yourself needing to open one of these without Giruad's special tool.

Based in the Grand Cru village Aÿ, Henri Giraud is the oldest Champagne house still owned by its founding family (1652), and produces some of the most sought after and well-regarded wines of any house in Champagne. Fût de Chêne is their flagship cuvée, and is made from a blend of predominantly pinot noir. This is 80% pinot noir and 20% chardonnay.

PAIRING IDEAS: My wife, Joanne, makes a simple, irresistible spread with smoked trout. Cream cheese, chives, mustard, lemon juice, salt and pepper and LOTS of crumbled smoked trout. This is highly addictive with a rich, showy, amazing glass of bubbly!

MUSIC SUGGESTIONS: “Praise You” from Fatboy Slim. Yeah, it’s old “big beat”, but man does put us a groovy mode to drink bubbly!

About the Producer

The Goutorbe family has been producing estate-bottled champagne in Aÿ since the late 1940s, but even before that they were already established as pépiniéristes, nurserymen for propagating vine cuttings. Emile Goutorbe established the nursery business just after the First World War, while he was the vineyard manager for Perrier-Jouët, and the success of this business eventually allowed him to purchase some parcels of vines in the area. His son Henri created the Goutorbe label, bottling and selling some champagne while continuing the nursery business. In 1970, Henri’s son René took over the estate, expanding the vineyard holdings and enlarging and modernizing the winery. Today they own 25 hectares, a considerable quantity for a champagne grower, planted with 70 percent pinot noir, 27 percent chardonnay and three percent meunier. The jewel of Goutorbe’s vineyard holdings is their six hectares of Aÿ grand cru, although they also own vines in several other villages, including Mareuil-sur-Aÿ, Bisseuil, Avenay Val d’Or and Hautvillers.
