Wow! We are getting particularly lucky of late with this producer (even if we never get quite enough to satisfy demand!). But, we’ll take what we can get! Don’t miss this one!
Organic and biodynamic since 2000, the Vacherons are without question Sancerre’s leading winemaking clan. From the family’s pioneering work in identifying and utilizing the region’s top terroirs, to their leading position in biodynamic viticulture today, there are few if any artisans in Sancerre as exacting or as respected.
Get out the oysters...this epiphany-level bottling will put your taste buds into overdrive -- massive complexity and minerality, flint and tightly focused citrus and citrus acidity, with flavors of lime and zesty yuzu fruit. Long and quite literally mouth-watering. BRAVO! We got our bottles (and picking up oysters on the way home). Don’t miss!
PAIRING IDEAS: Oysters, always, but switch it up! Make a killer-diller top-shelf oyster po-boy. Dredge your oysters in flour/cornmeal/pepper/onion and garlic powder and fry them. Pack your favorite bun with a remoulade, make a citrusy/walnut oil salad on the side and eat. So perfect with Sancerre! Rough guide recipe here.
