We have been proudly importing Salmon’s fantastic wines for 7 years now, and I think this might be the first time we have had enough of the RARE Cuvee Les Catherines to send out an offer...we usually keep it for OUR cellars!

Les Catherines is the name of the single plot just a few hundred feet from the winery that was planted in 1969. This is one of the most beautifully layered and concentrated Champagnes we’ve tasted from Salmon. As many of you know, Salmon is a 3rd-generation Domaine based in the sleepy town of Chaumuzy in the Ardre Valley. They are specialists in Pinot Meunier, are a part of the Tresors des Vignes, also known as the Special Club (only 28 members), and competitive balloonists on top of that!

Exactly 1,234 bottles were produced of this best-of-the-best cuvee. With zero grams of sugar added, this is laser-focused on minerality, flinty, steely white fruits, white cherries, apricot cream, hazelnut butter, marzipan, salted Meyer lemon (maybe thrown on the grill for a second too?), and some chalk. This is mouth coating and superbly textured, which can only be from the very old vines, as there is no oak. It has a wonderful richness and viscosity for a house that tends to be more linear in style but this has the broadness and richness that makes it seem like it has more time in the bottle. The grapes were picked on the day Alexandre Salmon had his first son, so needless to say, this is a special one for him. Disgorged 6/17/2020, so nearly 6 years on the lees. This is smokin’, highly complex, one-of-a-kind Champagne! While it lasts...!

PAIRING IDEAS: Got a sous-vide machine? Get some of your favorite fish, a little oil, lemon, a kaffir lime leaf, whatever your jam is, and make a little salad. The creaminess of perfectly cooked fish is ah-mazing with this wine!

MUSIC SUGGESTIONS: We’ll have to go classical with this beauty. Check out "A Thousand Mountains, A Million Streams" by composer Lei Liang, a monumental work intended as a reflection of man-made destruction of natural landscapes.

About the Producer

The Salmon winemaking legacy spans three generations, and their history of growing grapes stretches back even further. Michel, the grandfather, was born and raised in Chaumuzy, a sleepy little town in the Ardre Valley. He worked in the vineyards most of his life before acquiring a plot of land for himself. In 1958 he produced the first vintage, a grand total of 500 bottles. Today he still hangs around, but his son Oliver and grandson Alexandre maintain the day to day operations and total annual production. The Pinot Meunier grape likes the climate of Domaine Salmon. It draws its strength from the harshness of winter and its fruity flavors from the humidity of its springs. Our clay-limestone soil brings minerality to the grapes. At harvest time, its large black grains with white flesh look great. They offer the palate gourmet nuances which will give its champagne its dense color and its taste notes that are both light and deep.
