Domaine Guy Robin Chablis Valmur Grand Cru 2018
We have but a few cases of this -- don’t delay if you love Grand Cru Chablis like we do! Made by Marie-Ange Robin from her family’s excellent old-vine parcels, we think this is exactly the right thing to offer today on International Women’s Day!
Marie-Ange Robin is a legend in Chablis. In the early 2000s, she had a choice - stay in Paris and pursue a successful career as a fine art dealer, or return home to Chablis and take the reins of the family winery. There are few other Chablis estates with such a rich collection of older vines, and as a result, few other estates that deliver Chablis wines of such character, concentration and complexity. Because Guy refused to tear up vines for high-yielding clones, as was the practice decades ago in Chablis, some 80% of the family’s vines across five grand cru vineyards and four premier cru vineyards are older vines – these low-yielding plants deliver Chardonnay that is richly aromatic, finely tuned, deeply concentrated and exquisitely balanced. BRAVO!!

PAIRING IDEAS: Steely but rich. Fresh yet luxurious. We love smoked trout with Chablis, and even grilled with some fresh green herbs. Or for something a little more elevated, do veal or chicken in cream sauce, also very classic and utterly perfect together.
