The Buisson family has called the quaint village of St. Romain their home for nearly a millennium – with much of that time in the role of grape growers. For most of that history, at least up until 1947, they sold all their fruit. Now, three generations of winemakers have helped put this Domaine on the map...and their star is rising!
Brothers Franck and Frédérick Buisson run the estate today, an enviable plot of 19 hectares (11 of which is planted to pinot noir) in the isolated valley hidden away on the road that runs from Meursault and Volnay through to Auxey Duresses and then onwards to Saint Romain. This plot lies west of some of the Cote de Beaune's most famous vineyards and, with historic temperatures somewhat cooler than their neighbors, has long produced wines with brightness and energy. This “Sous Roche” parcel faces the “Sous la Velle” vineyard on the opposite side of the valley, on steep slopes of limestone and marne. The vines here average some 50+ years in age and are revered for their intense concentration and naturally low-yielding fruit.
That concentration and brightness are found in this fantastic 2021 vintage – with the folks at Robert Parker’s The Wine Advocate calling it “a particular success in this more challenging year.” We think it is straight-up brilliant stuff for any recent vintage of Burgundy – a nod to the old school, cooler climate style that perfectly captures the unique terroir of St. Romain. The organic farming since the 1970s has truly left its stamp on the vines, and the more recent full transition to biodynamic farming makes this an estate to watch. The quality is entrancing, much like the perfumed aromatics of red roses and pressed raspberries that immediately pull you into the glass. More fruits of plums and tart blackberries await you on the palate, with a prevalent minerality, and fresh earth profile that seamlessly balances the entire experience. The brothers have limited their sulfur use to nearly zero across their entire portfolio – making a “natural” style that is exceptionally sound and never overtly funky. This philosophy has made them one of the darlings of the exploding “Au Natural” French wine bar scene – and it is only a matter of time before they make it big here in the USA!

PAIRING IDEAS: This is the perfect fit with some beet-cured gravlax – grate a peeled red beet, mix it with a 50/50 blend of sugar and salt, and completely cover a whole side of salmon (skin on) with lots of fresh dill and some crushed juniper berries. Wrap it tightly with cling film and forget about it in the fridge for 2-3 days. Rinse, dry, and slice super thin...et voila!
